Choc Brownie
1 1/4 cups sugar
1/2 cup cocoa
1/2 cup flour
1 teaspoon baking powder
3 eggs, lightly beaten
175 g butter, melted
1 teaspoon vanilla essence
Preheat the oven to 160°C. Line a 27 x 18 cm baking tin with baking paper. Place the sugar, cocoa, flour and baking powder into a large bowl. Mix together and make a well in the centre. Add the eggs, butter and vanilla essence to the well. Mix until combined. Place the mixture into the prepared tin. Bake in the preheated oven for 40 minutes or until the brownie just springs back when pressed lightly in the centre. Cool in the tin. When the brownie is cold, remove from the tin and cut into small squares.

This is a perfect recipe to bake as its very fast and makes that homely feel,

- 3 eggs
- 7 oz sugar (1 cup)
- 9 oz self raising flour (1 1/4 cups)
splash of vanilla
pinch of salt
N.B plus 1 oz flour for large eggs.
1. Beat eggs, add sugar, then flour vanilla and salt
2. 7mins at 200degrees celcius. 9 on each tray, makes 27
Enjoy with butter and jam or cream on top. mmm my fav
