Lemon Sour Cream Cake

A family favourite:

Ingredients:
  • 125g Butter softened 
  • 2 Teaspoons of grated lemon rind 
  • 1 Cup of Sugar 
  • 3 Eggs 
  • 1 Cup Standard Flour 
  • 1 Teaspoon of Baking Powder 
  • 1/2 cup of sour cream ( try adding a wee bit more! Yum!)

Icing:
  • Icing Sugar 
  • Butter
  • Lemon juice

Beat Butter, lemon rind, sugar and eggs together until light and fluffy. Sift flour and baking powder together. Fold the sifted ingredients into the egg mix alternately with sour cream, mixing until smooth. 


Pour mixture into a greased line 20 cm tin. Bake at 160 degree C or until cake springs back when touched. Leave to stand in tin for 10mins before turning out onto a wire rack. 

Smother in lemon icing (melt butter, add icing sugar and lemon juice stirring constantly). 

Perfect as a pudding straight out of the oven and then the best tasting cake for tomorrow.

The BEST chocolate brownie in the world

Choc Brownie

1 1/4 cups sugar
1/2 cup cocoa
1/2 cup flour
1 teaspoon baking powder
3 eggs, lightly beaten
175 g butter, melted
1 teaspoon vanilla essence

Preheat the oven to 160°C. Line a 27 x 18 cm baking tin with baking paper. Place the sugar, cocoa, flour and baking powder into a large bowl. Mix together and make a well in the centre. Add the eggs, butter and vanilla essence to the well. Mix until combined. Place the mixture into the prepared tin. Bake in the preheated oven for 40 minutes or until the brownie just springs back when pressed lightly in the centre. Cool in the tin. When the brownie is cold, remove from the tin and cut into small squares.

Grandma V's Eienkoeken Recipe

This is a perfect recipe to bake as its very fast and makes that homely feel,

Eienkoeken

  • 3 eggs
  • 7 oz sugar (1 cup)
  • 9 oz self raising flour (1 1/4 cups)

    splash of vanilla
    pinch of salt
N.B plus 1 oz flour for large eggs. 

1. Beat eggs, add sugar, then flour vanilla and salt 
2. 7mins at 200degrees celcius. 9 on each tray, makes 27

Enjoy with butter and jam or cream on top. mmm my fav
